Milk freezes well for about three months. It separates and looks grainy when thawed, which is alarming and harmless. Shake it hard and it comes back together.
Freezing pushes the fat and water in milk apart, so thawed milk often looks yellowish and slightly curdled. The structure changes, the safety does not. It is still fine to drink, and it is indistinguishable in cooking, baking, sauces and coffee.
| Keeps for | Up to three months, best within one |

| Best for | Cooking, baking, smoothies and coffee rather than a cold glass |
How to freeze it
- Pour off a generous splash so the container has room to expand, or it splits.
- Freeze it in the original plastic jug, or decant into freezer bags laid flat for faster thawing.
- Freeze in usable portions. A whole gallon takes two days to thaw and then has to be used quickly.
- Label it with the date. Frozen milk looks the same at one month and six.
- Thaw in the fridge, never on the counter, and never in hot water.
What happens when you get it wrong
- It separates and looks grainy. Expected. Shake it hard, or blitz it for a second, and it re-emulsifies.
- It turns yellow. Also normal. The fat concentrates as the water freezes first.
- A split container. Milk expands as it freezes and a full jug has nowhere to go.
- Thawed on the counter. The outside sits in the danger zone for hours while the middle is still frozen. Fridge only.
Freeze it in an ice cube tray for coffee, so you take out only what you need.
Skimmed milk separates less than whole milk, because there is less fat to split out.
What about other dairy
Cream whips badly after freezing but is fine in cooking. Hard cheese freezes well and crumbles afterwards, so use it for cooking rather than a cheese board. Soft cheeses and yoghurt go watery and grainy, and cottage cheese is a lost cause.
Frequently asked questions
Can you freeze milk?
Yes, for up to three months. It separates and may look yellow or grainy when thawed, which is normal. Shake it well and it is fine to drink and perfect for cooking.
Why does frozen milk look yellow and lumpy?
The fat and water separate at different rates as it freezes. The appearance changes, the milk does not spoil. Shaking it hard brings it back together.
How do you thaw frozen milk?
In the fridge, over 24 to 48 hours depending on the size of the container. Never on the counter or in hot water, because the outside warms into unsafe territory long before the middle thaws.
How long does thawed milk last?
Three to four days in the fridge, and it will not last as long as fresh milk of the same date. Smell it before using it.
Can you freeze milk in the carton it came in?
Plastic jugs, yes, once you pour off a splash to allow for expansion. Cardboard cartons can split at the seams, so transfer that milk to a bag or a tub.
