Using ceramic properly

  1. Check the base for an oven-safe mark before the first use.
  2. Bring the dish to room temperature. Fridge-cold ceramic into a preheated basket is how they crack.
  3. Pick a dish that leaves space around all sides, so the air can still move.
  4. Expect to add a few minutes, because ceramic heats slowly.
  5. Lift it out with tongs or a sling of foil. It gets far hotter than it looks.

What happens when you get it wrong

  • A crack across the base. Thermal shock, nearly always from a cold dish or a cold worktop under a hot dish.
  • Sparking. Metallic trim in a combination microwave air fryer. Plain ceramic in a standard air fryer does not spark.
