Wood swells when it soaks and shrinks when it bakes dry. A dishwasher does both in one cycle, which is why boards split and spoons go furry.
Wood is porous and moves with moisture. A dishwasher soaks it in hot water for an hour, then blasts it with dry heat. That cycle of swelling and shrinking is what opens cracks along the grain, and on a glued board it is what separates the joints.
| Short answer | Never, for boards, spoons, handles or bowls |
|---|---|
| What happens | Splitting, warping, raised grain, cracked glue joints |
| Worst case | A board that comes apart at the seams |
| Correct method | Hot soapy water, rinse, dry standing on edge |
| Monthly | Food grade mineral oil to keep moisture out |
How to clean wood properly
- Wash by hand in hot soapy water straight after use, rather than leaving it to soak.
- Never let a board sit in standing water, even for ten minutes.
- Rinse, then dry it standing on its edge so both faces dry evenly. A board drying flat traps moisture underneath and warps.
- For smells, scrub with coarse salt and half a lemon, then rinse.
- Oil it once a month with food grade mineral oil. Dry wood is what cracks.
What happens when you get it wrong
- Cracks along the grain. Usually visible after one or two cycles on an end grain board.
- Joints opening up. Glued boards come apart, and this is not repairable at home.
- Fuzzy, rough spoons. Soaking raises the grain permanently, and a rough spoon holds bacteria more easily than a smooth one.
- Warped boards. A board that rocks on the counter is both annoying and unsafe with a sharp knife.
Plastic or composite boards are genuinely dishwasher safe if you want one board you never think about.
Keep the wooden board for bread, cheese and vegetables, and run the plastic one through the machine after raw meat.
Frequently asked questions
Can you put a wooden cutting board in the dishwasher?
No. The combination of an hour of hot water and then dry heat makes wood swell and then shrink, which splits the grain and opens glued joints. Hand wash it and dry it on edge.
What about wooden spoons?
Same answer. They survive longer than boards because they are solid, but the grain raises and they end up rough and splintery. Hand washing takes seconds.
Is a cracked wooden board unsafe?
A deep crack traps food and moisture and is difficult to clean properly, so yes, replace it. Fine surface checking can be sanded smooth and re-oiled.
How do you disinfect a wooden board without a dishwasher?
Hot soapy water for everyday use. For raw meat, wipe it with diluted white vinegar or a weak bleach solution, rinse, and dry it standing on edge. Wood is naturally less hospitable to bacteria than people assume.
How often should you oil a wooden board?
Roughly once a month, more if it looks dry or pale. Use food grade mineral oil, not cooking oil, which goes rancid.
